Bib Bob Gibson's B-B-Q White Sauce

Bib Bob Gibson, hailing out of Decatur, Alabama, was not just a local legend, he is pure and simple, a BBQ legend country-wide. 

Big Bob first started selling his mayonnaise based chicken bbq out of his backyard around 1925. It became so popular up there in Northern Alabama that he eventually opened up a family operated restaurant.

Well his mayonnaise based sauce is the topic of this post. Though this sauce is not popular, yet, here on Guam, that doesn't take away from the fact that this is one fantastic sauce. I have used it on occasion and let me tell you....simply awesome.

It's a real simple process, make your sauce, bbq your chicken or pork and dip your meat into this sauce. You can use it to baste, dip or even marinade your chicken or pork in. This tangy, lemony sauce with a subtle cayenne pepper bite, gives you a flavor that you will not soon forget.

Well, there are a few versions of this recipe but here is one straight from the "Big Bob Gibson's BBQ Book" and there are many more in this book by Chris Lilly, World Champion Pitmaster. You've gotta buy this book.

Here's the recipe:

2 cups of mayonnaise
1 cup distiled white vinegar
1/2 cup apple juice
2 teaspoons prepared horseradish
2 teaspoons ground black pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper

Mix this all together until it becomes a smooth, creamy sauce.

Froots Restaurant, Guam....A Great, Health-Conscious Place to Eat!!!!

We love fast food. Who doesn't!! One of my wife's favorite fast food restaurants here on Guam is Froots.

Froots is a nation-wide fast food restaurant franchise. The local franchise on Guam is owned by Christine Baleto. There are two locations on Guam. The first one opened in the Agana Shopping Center. This did so well, another restaurant was opened at the Guam Premium Outlets also known as GPO. Froots offers an array of made-to-order smoothies, wraps, paninis, salads and soups. This restaurant sports a health food theme. And they do it well.

The last time we went to Froots, my wife ordered the California Turkey Wrap wrapped in a spinach tortilla. This wrap is packed with turkey breast, bacon, Monterrey jack cheese, tomato, onion, alfalfa sprouts, avocado, spring mix, and ranch dressing. My wife loves this wrap.

I ordered the Tropical Toucan smoothie. This smoothie is "off the hook". It contains mango, peaches, strawberry-kiwi juice and orange sherbert, all my favorite flavors. These smoothies are thick, cold (brain freeze) and just plain delicious.

Jeff's Pirates Cove, Ipan Talofofo, Guam

Considered one of the jewels of southern Guam, Jeff's Pirates Cove is the perfect place to stop and fill up your "tank" and knock down a few refreshing "cocktails" at the same time. A popular tourist attraction, Jeff's also is considered one of the top cultural centers on the island. But the locals know it for being one of the best BBQ eateries you will find anywhere.

The pirate himself, Jeff Pleadwell, inside his bar and restaurant. Jeff has been the proprietor of "The Cove" since 1979. This establishment is a very popular local, military and tourist destination. Jeff loves to party and plays host to many weddings, large beach and birthday parties, concerts, company events and more. 

Jeff hasn't lost touch with his roots. He is hands on especially ensuring quality control over his fantastic, legendary BBQ'd pork spare ribs and chicken.

Jeff and his ever faithful main BBQ guru, Lickie. Jeff told me that Lickie as been with him way too long.....about 10 years (I hope he was joking). Jeff told me he is "the man". I personally know that these guys can BBQ all day long. Now that is what I call "hang time".

Jeff's secret, besides his mysterious and finger licking good marinade, is that he exclusively uses quality mesquite charcoal.

What can I say, Jeff even has his own hot sauce. Now that's hot!!!!

These few pictures and comments do not even come close to giving Jeff's Pirate's Cove it's due. It is a legendary destination on Guam. Many military personnel have called Jeff's their home away from home. There is a fairly even mix of local, tourist and military patrons.

Going to his web site is truly an adventure. Explore it. It is fascinating. Kind of like "The Pirate" himself.

This really explains the cuisine better than I ever could. All I know is that when you eat here, you better have room to expand that waistline. Your tank will be full when you leave.
